British Columbia regulates grease trap maintenance and fats, oils, and greases (FOG) management through a combination of provincial environmental legislation and municipal sewer-use bylaws. The Ministry of Environment and Climate Change Strategy oversees environmental protection standards, while local governments enforce pretreatment requirements through their sanitary sewer bylaws. Restaurants, food processing facilities, and other commercial kitchens must comply with provincial plumbing codes and municipal sewer discharge standards that restrict FOG from entering public wastewater systems. These regulations exist to protect municipal infrastructure, prevent blockages in sewer lines, and reduce operational costs at treatment facilities. Grease trap installation, sizing, and maintenance are typically mandated by municipal building codes, and property owners and operators bear responsibility for ensuring proper grease management and regular cleaning to prevent violations and system failures.
In British Columbia's largest metropolitan areas, municipalities have implemented specific FOG compliance programs for food service establishments. Richmond, as part of the Metro Vancouver region, enforces strict sewer-use bylaws requiring regular grease trap cleaning and inspection documentation from commercial kitchens. Similarly, Coquitlam and New Westminster maintain pretreatment programs that include grease trap capacity requirements and cleaning frequency standards. Each city or sewer utility sets its own rules — see the British Columbia grease trap rules guide. Inspection programs may require restaurants and caterers to demonstrate compliance through maintenance records, and some municipalities conduct sewer inspections to verify that FOG is not entering the public system.
