Ontario's grease trap compliance requirements are governed by the Ontario Water Resources Act, the Environmental Protection Act, and municipal sewer-use bylaws. Each municipality sets its own rules. Toronto, for example, requires hydro-mechanical grease interceptors to be serviced every four weeks or before grease and solids reach 25% of the liquid volume, whichever comes first, and gravity interceptors to be pumped out before they reach 25%; unless a kitchen produces little grease and has no stove or fryer, the servicing must be done by a waste carrier approved by Ontario's Ministry of the Environment, Conservation and Parks, and records are kept for at least seven years (City of Toronto).
