New Brunswick regulates grease trap maintenance and fats, oils, and greases (FOG) compliance through its Department of Environment and Local Governments, working in coordination with municipal authorities across the province. While New Brunswick's primary environmental framework emphasizes water quality protection under provincial environmental protection acts, responsibility for FOG management largely falls to individual municipalities, which enforce local sewer-use bylaws and pretreatment standards. Commercial food service operations, including restaurants, catering facilities, and institutional kitchens, are required to install and maintain adequate grease interception devices to prevent FOG from entering municipal wastewater systems. These regulations reflect Atlantic Canada's commitment to protecting local waterways and reducing strain on treatment infrastructure.
In Saint John and Moncton, the province's largest urban centers, municipal codes typically mandate regular grease trap cleaning and inspection for food service establishments. Saint John's wastewater management system requires operators to maintain compliant pretreatment equipment and document maintenance activities. Moncton similarly enforces grease trap inspections as part of its broader environmental compliance program for commercial properties. Each city or sewer utility sets its own rules — see the New Brunswick grease trap rules guide.
