Ontario's grease trap compliance requirements are governed by the Ontario Water Resources Act, the Environmental Protection Act, and municipal sewer-use bylaws. Each municipality sets its own rules. Toronto, for example, requires hydro-mechanical grease interceptors to be serviced every four weeks or before grease and solids reach 25% of the liquid volume, whichever comes first, and gravity interceptors to be pumped out before they reach 25%; unless a kitchen produces little grease and has no stove or fryer, the servicing must be done by a waste carrier approved by Ontario's Ministry of the Environment, Conservation and Parks, and records are kept for at least seven years (City of Toronto).
Toronto's Sewer Use Bylaw and Ottawa's Sewer Use Bylaw both impose strict limits on FOG concentrations discharged to the sanitary sewer system, with inspections conducted regularly by municipal enforcement officers. For other municipalities, see the Ontario grease trap rules guide.
