Regulatory Context

FOG Compliance in New Mexico

New Mexico food service operators must comply with FOG pretreatment standards under the New Mexico Environment Department (NMED) and local utilities. Albuquerque Bernalillo County Water Utility Authority and Santa Fe Utilities maintain FOG control requirements including grease interceptor installation, maintenance schedules, and manifest retention. Arid conditions can concentrate FOG in sewer lines, making regular maintenance critical.
