Regulatory Context

FOG Compliance in Maryland

Maryland food service operators must comply with FOG pretreatment standards under the Maryland Department of the Environment (MDE) and local utilities. Baltimore City's Department of Public Works, Washington Suburban Sanitary Commission (WSSC), and Anne Arundel County Public Works operate active FOG programs. Requirements include interceptor installation, cleaning every 30–90 days, certified hauler manifests, and three-year record retention. Maryland's Chesapeake Bay restoration goals add additional regulatory weight to FOG compliance.
