FOG Compliance in Illinois

Illinois food service operators are subject to FOG pretreatment regulations under the Illinois Environmental Protection Agency (IEPA) and local sewer utilities. The Metropolitan Water Reclamation District of Greater Chicago (MWRDGC) and downstate utilities enforce interceptor requirements, pumping schedules, and manifest retention. Chicago's Municipal Code Chapter 11-12 specifies grease interceptor installation requirements for food service establishments, with records retained for three years.
