Regulatory Context

FOG Compliance in South Carolina

South Carolina food service establishments must comply with FOG pretreatment requirements under the SC Department of Health and Environmental Control (DHEC) and local utilities. Columbia Water, Charleston Water System, and Greenville Water/Sanitation enforce interceptor installation, pumping schedules, and record retention. South Carolina's growing restaurant industry has led to increased enforcement of FOG regulations to protect aging sewer infrastructure.
