Regulatory Context

FOG Compliance in North Carolina

North Carolina food service establishments must comply with FOG pretreatment requirements under the NC Division of Water Resources (DWR) and local utilities. Charlotte Water, Raleigh Public Utilities, Durham One Water, and Greensboro Water Resources maintain active FOG Control Programs. Requirements include interceptor installation, pumping every 30–90 days, certified hauler manifests, and three-year record retention. NC's rapid population growth has intensified enforcement to protect aging sewer infrastructure.
