Regulatory Context

FOG Compliance in New Jersey

New Jersey food service establishments are subject to FOG pretreatment regulations under the NJ Department of Environmental Protection (NJDEP) and local sewer utilities. Newark's Passaic Valley Sewerage Commission, Bergen County Utilities Authority, and Middlesex County Utilities Authority maintain active FOG programs. New Jersey's dense urban restaurant market means rigorous enforcement, with interceptor installation, quarterly pumping, certified hauler manifests, and three-year record retention typically required.
