All Used Cooking Oil Collection

Used cooking oil (UCO) — the waste vegetable, canola, or other frying oil generated by commercial kitchens — is a regulated waste stream subject to disposal requirements in most US states and Canadian provinces, and simultaneously a commodity with established market value as a feedstock for biodiesel and renewable diesel production. Proper UCO collection is both a compliance obligation and, in many cases, a revenue opportunity for food service operations.

Commercial food establishments generating UCO are generally required to store it in sealed, leak-proof containers and arrange for collection by a licensed waste transporter. Improper disposal — pouring UCO into drains, dumpsters, or storm drains — violates both environmental regulations and FOG program requirements, and is a primary cause of drain line blockages and grease interceptor overloading. Establishing a proper UCO collection program also reduces the total FOG load entering your grease interceptor, which can meaningfully extend the interval between required pump-outs.

Many grease trap service providers offer UCO collection as a complementary service — the same vacuum truck servicing the interceptor can collect oil from your storage container in the same visit, reducing the total number of service vendor relationships to manage. Some UCO collectors offer revenue-sharing programs for high-volume operations generating consistent quantities of quality oil.

Used Cooking Oil Collection: Compliance, Economics, and What to Look For

Used cooking oil management sits at the intersection of environmental compliance and operational economics. Getting it right is straightforward once you understand what is required and what your options are.

The regulatory baseline. In most US states, used cooking oil is classified as a non-hazardous liquid waste requiring disposal through a licensed waste transporter. State-specific regulations vary: California, Texas, Florida, and New York have explicit UCO hauler licensing requirements with public registries. Other states regulate it under broader liquid waste hauler frameworks. Canadian provinces similarly require licensed transport and approved disposal. The core requirement is the same across jurisdictions: sealed storage, licensed collection, documented disposal.

Why proper UCO management benefits your grease trap. Cooking oil poured down a drain in bulk is immediately problematic for your interceptor. Segregating UCO from the drain stream at the source — collecting it properly in dedicated containers — directly reduces the FOG load on your interceptor and can meaningfully extend pump-out intervals. This is one of the few FOG compliance measures that pays for itself through reduced service frequency.

Container options and placement. UCO storage containers range from 35-gallon portable totes to 250-gallon permanent poly tanks. The right size depends on your operation's weekly oil generation volume. Most UCO collection companies provide and maintain collection containers as part of their service — confirm whether the container is included, what the capacity options are, and who is responsible for cleaning and repair. Container placement should be accessible to a service vehicle, protected from unauthorized access, and located away from food storage areas.

Revenue sharing: who qualifies and what to expect. UCO has commodity market value as a biodiesel and renewable diesel feedstock. Large-volume, high-quality oil generators may qualify for revenue-sharing programs where the collector pays a per-gallon rate for the oil. The qualifying threshold generally starts at 50 to 100 gallons per collection. Operations generating lower volumes, using animal fats, or producing heavily contaminated oil typically pay for collection rather than receiving payment. Ask potential collectors directly about their qualification criteria and current market rates.

Bundling with grease trap service. Many established FOG service companies offer grease trap pumping and UCO collection as a bundled service, with the same vehicle handling both on the same visit. This reduces the number of service vendors, simplifies scheduling, consolidates documentation, and typically reduces total cost relative to separate providers. The operational simplicity of a single vendor for both services has real value beyond the line-item cost comparison.

What UCO collectors are required to provide. Like grease trap haulers, licensed UCO collectors should provide documentation for each collection — a service receipt showing the date, volume collected, and the transporter's licence number. Best practice is to retain UCO collection records alongside your grease trap waste manifests in a unified FOG compliance file.

Theft of cooking oil is an active issue. In high-demand periods for renewable fuel feedstocks, UCO theft from commercial kitchen storage containers is a documented problem in major metro areas. If you are experiencing unexplained reductions in your stored oil volume, or finding containers that have been accessed between scheduled collection visits, report it to your collector and local law enforcement. Secure container locks and placement away from unsupervised access points are straightforward preventive measures.
