Regulatory Context
FOG Compliance in Hawaii
Hawaii food service establishments must comply with FOG pretreatment rules under the Hawaii Department of Health (DOH) Clean Water Branch and county wastewater utilities. Honolulu's Environmental Services Department operates a FOG Control Program requiring grease interceptor installation, routine pumping (commonly every 90 days), certified hauler use, and three-year record retention. Given the islands' sensitive marine ecosystems and limited sewer infrastructure, strict FOG compliance is especially critical.More Contractors in Hawaii
