FOG Compliance in Tennessee

Tennessee food service establishments must comply with FOG pretreatment requirements under the Tennessee Department of Environment and Conservation (TDEC) and local sewer utilities. Metro Water Services (Nashville), Memphis Light Gas and Water (MLGW), Knoxville Utilities Board (KUB), and Chattanooga's Public Works enforce grease interceptor installation, routine maintenance (typically every 30–90 days), certified hauler manifest use, and three-year record retention. Tennessee Code Annotated §68-221-201 et seq. provides the framework for local pretreatment programs. Facilities causing sanitary sewer overflows (SSOs) attributable to FOG may face enforcement under TDEC's National Pollutant Discharge Elimination System (NPDES) program.
