Regulatory Context

FOG Compliance in Massachusetts

Massachusetts food service facilities are governed by FOG pretreatment requirements under the Massachusetts Department of Environmental Protection (MassDEP) and local sewer authorities. MWRA (Massachusetts Water Resources Authority), Boston Water and Sewer Commission, and dozens of local departments of public works enforce interceptor standards, pumping schedules, and manifest requirements. Records must typically be retained for three years. Massachusetts Title 5 regulations also affect facilities with private disposal systems.
