Grease Trap Overflow Emergency Checklist

Put life safety and food protection ahead of enforcement strategy, then record facts, service actions, and the confirmed cause.

Food-safety decision first: If sewage has backed up or wastewater may have contaminated food, equipment, utensils, or food-contact surfaces, protect the area and stop affected operations. Follow the adopted local food code, notify the regulator when required, and do not resume affected operations until permitted by the responsible authority.
Life-safety warning: Grease traps and interceptors can expose people to heavy or unsecured covers, falls, drowning, toxic or flammable gases, engulfment, and confined-space hazards. Keep untrained people away. Only trained, authorized workers following the site safety procedure may open or inspect equipment. Never enter a trap or interceptor.
