Delaware's approach to grease trap and fats, oils, and greases (FOG) compliance is governed under the oversight of the Delaware Department of Natural Resources and Environmental Control (DNREC), which enforces state environmental protection standards alongside federal EPA guidelines. While Delaware does not impose a statewide mandatory grease trap ordinance across all municipalities, individual cities and counties maintain their own plumbing codes and wastewater management requirements that address proper grease removal and pretreatment. Commercial food service establishments, including restaurants, cafeterias, and institutional kitchens, are expected to install and maintain appropriate grease interceptors or traps to prevent FOG from entering the municipal sewer system, where it can cause blockages, equipment damage, and environmental harm. Compliance typically involves regular inspection, cleaning, and proper disposal of accumulated grease in accordance with local plumbing codes and wastewater ordinances.
Wilmington, Delaware's largest city, maintains municipal regulations requiring commercial kitchens to install grease traps or interceptors sized according to their food preparation volume. Facilities must schedule regular professional cleaning and disposal to remain in compliance with the city's sanitary sewer use ordinance. New Castle, another major service area, enforces similar pretreatment standards for food service establishments to protect its wastewater collection system. Dover, the state capital, also requires proper FOG management through its local codes, with food service operators responsible for maintaining their grease removal equipment and documentation of cleaning and pumping services. These municipalities recognize that effective FOG pretreatment is essential for protecting publicly owned treatment works and reducing environmental impacts downstream.
