# Missouri Grease Trap and FOG Compliance
Grease trap maintenance and fats, oils, and greases (FOG) compliance in Missouri fall under the oversight of the Missouri Department of Natural Resources, which works in coordination with the U.S. Environmental Protection Agency and local municipal authorities. As a state with significant food service and hospitality industries, Missouri enforces pretreatment standards to prevent grease and solids from entering municipal sewer systems and wastewater treatment plants. Commercial kitchen operators, restaurants, and food processing facilities are required to install and maintain grease traps or interceptors according to plumbing codes and local ordinances, with regular pumping and cleaning essential to avoid violations and system failures.
In major metropolitan areas, municipal governments have implemented their own FOG management requirements. Cities like Springfield and St. Louis maintain local pretreatment programs that set standards for grease trap installation, sizing, maintenance frequency, and disposal practices. These programs typically require food service establishments to obtain permits, conduct regular maintenance, and document compliance through service records. Local utilities monitor FOG-related issues affecting sewer infrastructure and may impose operational restrictions or penalties on non-compliant facilities.
