Tennessee's approach to grease trap and fats, oils, and greases (FOG) compliance is governed through a combination of state environmental oversight and local municipal pretreatment programs. The Tennessee Department of Environment and Conservation (TDEC) serves as the primary state environmental agency responsible for water quality protection and wastewater management oversight. While the state does not maintain a statewide FOG mandate, many municipalities across Tennessee have adopted their own grease trap requirements and pretreatment standards to protect local water infrastructure and comply with federal Clean Water Act provisions. Food service establishments, restaurants, and other commercial kitchens in regulated areas are required to install and maintain properly functioning grease traps to prevent the buildup of fats and oils in municipal sewer lines, which can cause blockages, overflows, and environmental contamination. Compliance typically involves regular grease trap cleaning, proper FOG disposal, and adherence to local plumbing codes overseen by city or county authorities.
Major Tennessee cities have implemented FOG control programs tailored to their local wastewater systems. Nashville and Memphis, as the state's two largest cities, maintain active pretreatment divisions that monitor commercial kitchen operations and enforce grease trap maintenance schedules for food service businesses. These municipalities require regular pumping and cleaning of grease interceptors, with documentation submitted to local environmental or public works departments. Knoxville similarly enforces FOG compliance through its municipal water authority, requiring restaurants and food preparation facilities to maintain grease traps and avoid the discharge of unprepped grease into sewer lines. The specific frequency of cleaning and size requirements for grease traps vary by municipality but generally align with industry best practices and the volume of FOG-generating activity at each establishment.
