Texas regulates grease trap compliance through the Texas Commission on Environmental Quality (TCEQ) and local municipal pretreatment programs. Grease trap installation is set by local ordinances and sewer utilities, while TCEQ regulates the pumping, transport and disposal of the waste: only sludge transporters registered with TCEQ may pump and haul grease trap waste, and each pickup is recorded on a multi-part trip ticket, with copies for the business (TCEQ RG-389; 30 TAC 312.145).
Houston, the state's largest city and home to the nation's most active restaurant scene, operates a stringent FOG pretreatment program through the Houston Public Works and Engineering department, requiring commercial kitchens to maintain interceptors and submit service records. Dallas requires liquid waste transporters to hold a city permit, and Fort Worth requires businesses to use only permitted transporters and to have grease traps fully pumped out at least every 90 days, with the final trip ticket kept on site for five years (City of Dallas; City of Fort Worth).
