Grease trap maintenance and FOG (fats, oils, and grease) compliance in Utah falls under the oversight of the Utah Department of Environmental Quality, which enforces state water quality standards and pretreatment requirements for commercial food service operations. Utah's plumbing code and local health department regulations require food service establishments to install and maintain grease traps or interceptors to prevent FOG from entering municipal sewer systems. Proper grease trap operation is essential to protecting Utah's water infrastructure and meeting federal Clean Water Act requirements administered through the EPA's regional office.
Salt Lake City, Orem, and Park City each maintain local wastewater systems that depend on effective FOG pretreatment. Each city or sewer utility sets its own rules — see the Utah grease trap rules guide. Local plumbing inspectors verify compliance during permitting and periodic inspections, and violations can result in fines and operational shutdowns. Salt Lake City, for example, requires grease traps (hydro-mechanical interceptors) to be completely cleaned at least every 30 days, and gravity grease interceptors at least every 90 days or when they reach 25% of capacity, with maintenance records kept on site for at least five years (Salt Lake City Public Utilities).
