Nova Scotia regulates grease trap maintenance and fats, oils, and greases (FOG) management through its Department of Environment and Climate Change, which oversees environmental protection under the Nova Scotia Environment Act. Municipal governments administer local sewer-use bylaws that establish discharge standards for commercial kitchens and food service establishments. These regulations require property owners and operators to maintain grease traps and pretreatment systems to prevent FOG from entering municipal sewer systems, where it can cause blockages, equipment damage, and environmental contamination. Compliance typically involves regular cleaning, proper maintenance records, and adherence to local discharge standards set by individual municipalities.
Halifax, the largest urban centre in the province, enforces grease trap requirements through its municipal sewer-use bylaw, which applies to restaurants, catering facilities, and other food preparation businesses. Middle Sackville and Bedford, as growing suburban communities in the Halifax Regional Municipality, follow similar pretreatment standards. Each city or sewer utility sets its own rules — see the Nova Scotia grease trap rules guide. Many municipalities have shifted toward stricter enforcement in recent years to protect aging sewer infrastructure and reduce treatment costs.
