Regulatory Context

FOG Compliance in California

California food service facilities operate under some of the nation's strictest FOG regulations. The State Water Resources Control Board oversees pretreatment, while regional water quality control boards and local agencies enforce specific FOG Control Programs. Most jurisdictions—including Los Angeles, San Diego, San Francisco, and Sacramento—require interceptors sized to local standards (typically 1,000+ gallons for full-service restaurants), cleaning every 30–90 days, electronic manifests through certified haulers, and three-year record retention. The California Grease Trap Law (Health & Safety Code §17922.12) mandates interceptor installation in most commercial kitchen scenarios.
