When the current plan should be reviewed
A facility should review its written service plan after a change in menu, production, hours, equipment, plumbing, occupancy, or local requirements; after an inspection or documented service observation; or when slow drainage, odor, backup, overflow, or equipment damage is reported. These events do not automatically authorize a longer or shorter interval. They are reasons to consult the controlling authority, equipment documentation, and a qualified provider.
Where the applicable rule sets a time minimum, do not extend service solely because operations changed or the device appeared clean during a prior visit.
Safety boundary for owners and managers
Grease-device work can involve heavy covers, falls, biological exposure, and potentially dangerous atmospheres depending on the device and task.
