First separate slow drainage from a backup
Slow drainage without overflow: stop unnecessary discharge to the affected fixtures, record the symptoms, review service records, and arrange prompt qualified assessment.
Wastewater or sewage backing up: stop affected operations, keep people and food away, and contact qualified service and the local health or wastewater authority. Follow local instructions for cleanup and reopening.
Strong odor with physical symptoms: move people away from the area, keep others out, and avoid ignition sources. OSHA warns that hydrogen sulfide can be hazardous and smell is not a reliable measure of safety.
Information staff can collect safely
- which sinks, floor drains, or equipment are affected;
- whether the slowdown is constant or intermittent;
- whether gurgling, odor, residue, leakage, or backup is present;
- when the latest interceptor service and plumbing work occurred; and
- whether the problem changed after a high-volume period or recent service.
Do not run extra water as a test when the system may be restricted. Do not open an interceptor, inspect internal parts, clear a vent, or reach into an inlet or outlet.
Avoid actions that can move or spread the problem
- Do not use hot water, detergent, degreaser, drain cleaner, enzymes, or bacteria to force material through the system.
- Do not ask untrained restaurant staff to plunge, snake, auger, pump, scoop, or vacuum the affected interceptor or line.
- Do not continue discharging wastewater merely because the drain still moves slowly.
- Do not promise that a pump-out, camera, hydro-jetting, larger interceptor, or replacement will solve the issue before diagnosis.
What the provider may need to assess
A qualified provider can distinguish interceptor accumulation from damaged components, internal building drainage, downstream plumbing, or another cause. Recurring slow drainage after documented service may justify a broader review of equipment condition, local sizing requirements, service history, and kitchen practices.
Maintenance should follow the local wastewater program, manufacturer instructions, device type, and actual measured accumulation. No universal 30-, 60-, or 90-day interval can diagnose this problem.
Reduce future loading
Use the local FOG program’s practices for dry-scraping food waste, keeping used cooking oil out of drains, and using strainers where allowed. Maintain required service records. These steps reduce avoidable loading but cannot prove the cause of a current slow drain.
